In Chef's Lorraine kitchen there is no "Menu" ... .. trust is key factor between her and her clients , and she values that relationship "As a chef I do not want to do the same dishes everyday , I value new and fresh ingredients, so therefore there is no set menu , which freaks some clients out at first .. smile.... but I don't want to do the same salad , or work with the same rules everyday, that forces me to keep looking, to keep exploring so that way I can create a dish that meets the needs of the Gluten free person but still meet the needs of the Lactose Intolerant person, but still meet the need of the Diabetic at the table all while making sure the Foodie does not feel left out or cheated.... It's exciting , but when all four people smile that knowing smile and say "I have never tasted anything so good " or " I always thought i hated .... " I KNOW I HAVE DONE MY JOB.... "
